I found this on one of the on-line papers I read and this sounded so goood that I needed to share;;;
What you need:
2 pounds of ground venison burger
2 eggs
1 teaspoon salt
1 medium onion diced fine
1 cup grated Parmesan cheese
1 teaspoon black pepper
1 tablespoon dried parsley flakes
2 cups shredded mozzarella cheese
2 packages manicotti noodles
1 quart of your favorite Italian spaghetti sauce. I prefer a marinara sauce, but you can use a good meat sauce.
What you do:
Mix the venison burger with all the ingredients except for the cheese and noodles and set aside.
Boil the noodles in lightly salted water for five minutes, drain and then cool with cold tap water.
Vegetable spray a large baking dish and cover the bottom with a couple of ladles of the sauce.
Next, stuff the manicotti noodles with the venison mixture being careful not to break the noodle shells and place them in the pan. Ladle the remaining sauce over the manicotti and sprinkle with the cheese.
Cook the dish in a 350-degree oven for 25 to 30 minutes. Remove the pan and serve the manicotti on individual plates along with a tossed salad and Italian bread. |
